OP, that fried rice always looks delicious and i've been meaning to try it out. has cooking it been as easy as ut looks?

Yes, it's pretty easy! It's just like making regular fried rice, but the steps are just a little different. Maybe one more pan and bowl to clean up after. But the taste is really different from regular kimchi fried rice, just because of the cooking method. And usually when i make regular kimchi fried rice I add meat and eggs, and i don't miss that at all. Honestly, this way will replace how i cook it from now on. Also i love cheese lol.

I've been meaning to make this rice, but I cannot buy neither kimchi nor gochugaru. I know they are integral to the dish but do you know anything I can replace them with to have a similar feel? I was thinking maybe cayenne or chiles for gochugaru but I don't know what to put in place of kimchi. Also, what kind of rice would be best for this? What can be found in supermarkets here mainly is basmati, jasmine or bomba/valencian (a medium grain rice that absorbs a lot of liquid). I don't think there's short rice available.

Hmm maybe just cabbage in place of the kimchi? Or another leafy green veg like that. Bok choy? But since kimchi is cabbage anyway, cabbage alone may work as is. I think the jasmine or basmati rice should be fine. Something that could get a nice toasted crust in the pan. For the gochujang, I'm not sure lol. Maybe a doctored up sriracha? If you have something like a sriracha type sauce. But making your own sauce with chillies and cayenne could work. Probably will have a fresher taste too. I think the sauce is more for flavor than for spiciness. Because when you add the cheese, it tones down the spice anyways.

They're such cute friends! Not a fan of WINNER (or any YG group but I Seungyoon always gets a bit of support from me since I liked him in SuperStar K) and I think it woud be better for Mino to just do music with PO =)
