Since it’s still summer an "ice cream special" feels like a good idea.
For this post we have 3 recipes, 2 which use egg yolks.
Egg yolks are mainly used for binding and to give a nice, smooth and creamy texture to the ice cream. However I think you can use lecithin as a substitute; and you can use soy cream/milk and thus you'll have a vegan recipe.

GREEN TEA ICE CREAM (by Yakuniku-8)

What do we need:

  • 2 cups cream (500ml)

  • 1 cup whole milk (250ml)

  • 4 egg yolks

  • 2/3 cup sugar (200 g)

  • 3 table spoons green tea powder (it depends on the green tea you bought)


How to :

- in a pan, mix the cream and the milk and bring to a boil.
-in a bowl, whisk the yolks, sugar and green tea.

- gradually add the cream and milk mixture while whisking.
-pour the mixture in a heavy-bottomed pan.
Cook on low heat and mix continuously until it thickens and becomes creamy (to know if it's ready you can dip a wooden spoon into the mixture. At the beginning, since it's liquid, it won't stay on the back of the spoon. If it's ready, since it's thicker, it will stay on the back of the spoon).
- cover it and let it cool for at least 1 hour.
- pour it into a bowl and place it in the freezer. (you can put an empty bowl in the freezer the day before, it will be easier). Freeze it for at least 4 hours.

If you don't have the machine, don't panic! I don't have one neither. Here is a video to show you how you can make the ice cream without an ice cream maker. (if you want to follow her recipe, “half half” is composed of 50% whole milk and 50% cream).

LITCHI AND LEMON SORBET

What do we need:

  • 300 g of litchi

  • 100 g of sugar

  • 10 cl of water

  • 1 green lemon juice

As it’s not really the season for litchi, not in my country anyway, I used canned litchi. One can will suffice for 2 people (it’s about 250g I think). In that case you don’t have to make your own syrup, you can just use the one from the canned litchi. Some recipe recommend to add extra sugar but I don’t; I think it’s sweet enough as it is. I do however infuse lemon zest in it.

How to :

Peel the lychees, then place the flesh in a blender and process until smooth.
In a saucepan, mix water, sugar and lemon zest; stir over medium heat until sugar dissolves.

If you’re using canned litchi just infuse the lemon zest into the canned syrup

Squeeze the juice of a green lemon.
Add the syrup and lemon juice in the blender.
Mix everything together.

You can also use a few drops of food coloring if you want a more vivid colo

Place the mixture in the the ice cream maker for 20 minutes.
Place your sorbet in the freezer for at least 4 hours before serving.


BONUS RECIPE: CINNAMON ICE CREAM

What do we need:

  • 250 ml (1 cup) of whole milk

  • 3 cinnamon sticks

  • 1 vanilla pod

  • 75 g (1/2 cup) of sugar

  • 2 egg yolks

  • 125 ml (1/2 cup) of heavy cream


How to :

Cut the vanilla pod in half (length wise).
In a saucepan, bring the milk, the caviar from the vanilla bean, the vanille pod and cinnamon sticks to a boil (you can also add ground cinnamon for a stronger taste).
Cover and remove from heat.
Let it infuse for 10 minutes then remove the cinnamon sticks and vanilla pod.

In a bowl, combine egg yolks and sugar.
Whisk vigorously until mixture is very thick (3 to 5 minutes).
Using a ladle slowly add the warm milk to the egg yolks..

Transfer the mixture into the saucepan cook over low heat.
Stir constantly until the mixture is thick enough to coat the back of a wooden spoon.

Remove from heat and and pour into a bowl.
Add the heavy cream and stir it all together.
Let the mixture chill a little then pour into the ice cream machine and process it for 20 minutes (the time required may vary depending on how much ice cream you’re making and your equipment).

It's delicious with a tarte tatin
