I've been hoping to hear from them for ages but since their last activity was in like November (and their official MV seems to have disappeared), I was so afraid that they'd vanished. Except apparently they have been doing stuff on YT, never mind...I've just been checking their official profile on Naver to see if they released anything and it never changed.
So this is completely OT but I'll be making a "eat like oppa/noona" post soon, about ice cream and one of the recipe requires egg yolk and I was wondering what could be use to replace it so that the recipe could be use by vegan omonians too... my knowledge of veganism is extremely limited and I don't eve know where to start >
Hmm. I'm not vegan (nor do I avoid eggs), but I've had to substitute for eggs when I've cooked/baked a few times. IIRC when you use egg yolk in ice cream, it's to keep the fat and water together + have it all freeze smoothly + make it all creamy, right? I think I've heard of people using pure lecithin (with water, I think) as a substitute to take care of that. I've also heard of people using a flax seed 'paste' (flax seed to water, 1 to 3) for a similar purpose...

vegans usually use bananas or avocados as an ice cream base tho. you got to look up 'nicecream'... it's too simple to make I don't think it deserves a post. lol

Lots of ice cream recipe use egg yolk, especially not-fruit ice cream like chocolate, vanilla, mint or in my case cinnamon and green tea. Banana and avocado seems like a good option but that would probably change the taste
Oh I see... Yeah the flavor change is why bananas aren't used in popular storebrand vegan ice cream even though they create the creamiest texture... Coconut cream is probably the best option. It has enough fat to make a creamy texture, but it's still going to change the flavor. Did you come up with another sub yet?
I use heavy cream to get the creamy texture, soy cream is a good alternative for that; for ice cream with a subtle taste like cinnamon even coconut cream is too flavoured (I've tried). In my case there's egg yolk involve to make the mixture more homogeneous (not more creamy), it really helps blend the other ingredients together and the result is smoother.
I think I'm gonna go with lecithin, I just need to find the right proportions; or maybe Ener-G but I have a better feeling about lecithin.
