Eat like oppa/noona - Kimchi Pancake

WHAT DO WE NEED (for 2)
- 150 g of pork - cut in cube (optional)
- 3 spring onions finely chopped
- 4 shiso leaves finely chopped*
- 1 chili pepper finely chopped (optional)
- 1 garlic clove finely chopped
- 62 g of rice flour
- 125 g of all-purpose flour
- 1 egg
- 4 tbs of kimchi
- salt
- Cooking oil
- 175 ml of water
HOW TO:
Mix the all-purpose flour and rice flour, water and egg in a bowl until the mixture becomes creamy.
Add the Kimchi, spring onions, shiso leaves, chilli pepper, garlic and salt to the mixture and mix well.
Heat 1 tbs of cooking oil in a large frying pan over high heat.
Pour a ladleful of the mixture into the pan.
When the edges of the pancake begins to color and the dough becomes less liquid (3 to 4 minutes), turn the pancake and cook the other side.
Repeat with the remaining dough by adding more oil if necessary.
Serve hot with grated lemon zest, kimchi and salad.
OP’s note :
I’m not a huge fan of this recipe.
I went for a veggy version but if I was to do it again I would definitely add pork and I would only use regular flour as I do not like the texture given by the rice flour.
But it’s really up to you and how you like it ^^

That said, my flatmate is planning to make kimchi-yaki... (as in, tacoyaki but with kimchi instead of taco) and i'm not sure whether to be excited or afraid.
