Mandu are korean dumplings traditionnaly made with beef or pork, but chicken and veggy are also a possibility.
The good thing about them is that it’s easy to make, you can prepare a large quantity and keep them in your freezer, it can be a first course or a main course; and finaly they can be fried, boiled or steamed. I had mine fried and boiled, but next time I’ll just fry them all cause it tastes so goooooooooooood.
It’s a really nice recipe, very tasty and quite healthy (well not so much if you have them fried, but the other two option are pretty great).

There’s several recipe, but I guess this one is pretty basic.

WHAT DO WE NEED (for 28 pieces):

  *FILLING
  250 g of pork (or beef, chicken…)
  1 onion, finely chopped
  1 bouquet of chive , finely chopped
  3 cloves garlic, finely chopped
  50 g of dried shiitake
  100 g of tofu
  2 tablespoons of sesame oil
  2 tablespoons soy sauce
  1 tablespoon of vegetable oil
  1 teaspoon of salt
  1 teaspoon of pepper

  Go veggy
  Replace the meat by:
  100g of finely chopped cabbage or leek
  Use 200g of tofu instead of 100g


*DOUGH/MANDU WRAPPERS
Be lazy, buy 1 package mandu wrappers (or their foreign equivalent, aka gyoza wrappers)


LET’S GO

Soak the shiitake in warm water for 30 minutes.
In the meantime, cut the tofu into cubes, put them in a large bowl with some sesame oil.
Add pork (or its equivalent), onion and chives to the bowl and mix by hand.
Drain the shiitake, cut them into small cubes, add to the filling and mix again .

In a bowl, combine garlic, two tablespoons of sesame oil , the soy sauce , salt and pepper.
Pour this sauce over the filling; mix for a few minutes.

Place 1 tablespoon of filling in the center of the mandu wrappers.
Dip your finger in cold water and wet the outside edge of the mandu wrappers.
Fold in half, press well, then crimp the edges.
Repeat until there’s nothing left.

If you want to fry them :
Heat a bit of cooking oil in a large frying pan .
Fry the dumplings 1 minute on each side .
Down the heat, add 3 tablespoons of water and cook for 3 minutes.

If you want to boil them :
Immerse the mandu in boiling water.
Cook 5 minutes, the mandu should start to emerge, like gnocchi , they’re ready^^

I know this is kinda OT but is it scary living in ktown? I want to move to LA someday but my parents always flip out

I've lived in cities for years, so it doesn't bother me. I live in a decent area, where I know some neighbors because I used to have a dog. I walk to most of my regular places (cafes, restaurants, bars). I lived in Hollywood down the street from Kodak/Dolby Theater for years and I think my area in Koreatown is a little better.

Stuff happens, just like any city. That's the bottom line.
